Activities & Dining

Welcome to Las Vegas! Whether it’s your first time or your 20th – we know that each visit always brings a new experience and we are thrilled to have you. What happens in Vegas doesn’t always stay there…

Where to Eat

Charlie Palmer Steak is a welcomed getaway from the extravagant flair of the Las Vegas dining scene. Access to the restaurant from either THEhotel or Mandalay Bay avoids the casino, so you enter feeling like you're in a completely different place. A jazz band gives the restaurant a bit of a swanky feel, but keeps the atmosphere from being too pretentious. Charlie Palmer is a world class chef, and the menu lives up to his reputation. Needless to say, the steaks are perfection, but the side dishes and other entrees really make this restaurant stand out. The wine list is intimidating, but skip to the "Wine for Adventurers" section to uncover something you wouldn't find anywhere else. And don't be afraid to ask the sommelier for help!” – Amanda Baikie, Interop Team Member

Location: In the Four Seasons Hotel on the South end of The Strip
Fare: American Steakhouse

Border Grill: LOVE the ceviche at this place (and the margaritas aren't bad either). This is the greatest place to have an outdoor, casual lunch. I saw celebrity chef and co-owner, Susan Feniger there.” – Jenn Sioteco, Interop Team Member

Border Grill is located inside the Mandalay Bay Resort & Casino
Fare: Mexican

Where to Eat if You Want to Get Away

The short rib & bone marrow agnolotti pasta dish at Scarpetto was a bite of gourmet excellence – Scarpetta is a delicious Italian Restaurant by chef Scott Conant that is perfect for client dinners or just a nice getaway from the Mandalay Bay. The restaurant has floor to ceiling windows that overlook the Bellagio fountain. A great dining experience all around.” – Christina Nguyen, Interop Team Member

Cosmopolitan Hotel
Fare: Italian

Located off the strip in an unassuming strip mall, Raku serves amazing, house made Agedashi tofu. While the menu is comprised mostly of small plate grill items, there is a daily selection of ultra-fresh sashimi that puts even the best Strip, sushi celebrity chef to shame. – Rafael Trickett-Robles, Interop Team Member

Raku is located at 5030 W.Spring Mountain Rd. #2,Las Vegas, NV 89146
Fare: Japanese

The Wicked Spoon is a wicked good buffet. I would never use gourmet to describe a buffet but this spot at the Cosmopolitan proves me wrong. Miniature bites are presented decadently and range from pappardelle beef oxtail to arugula beet salad to macroons. You can’t go wrong here.” – Christina Nguyen, Interop Team Member

The Wicked Spoon is located at The Cosmopolitan Las Vegas
Fare: Mexican
